Sourdough Discard Pizza Crust

Making pizza is an excellent way to use up your extra sourdough while adding a unique flavor to your finished dough. This recipe uses active yeast, so your pizza is ready to eat in under 2 hours. 


Yield:

This recipe makes one large half sheet (13" x 17") pizza, or can be split in two for use with smaller pans.

Materials:

  • Stand mixer with hook attachment
  • Oven
  • Large sheet pan or two small pans

Ingredients:

  • 425g bread flour
  • 5g instant yeast
  • 10g salt
  • 6g granulated sugar
  • 200g sourdough discard
  • 160g warm water (Around 110F)
  • 30g olive oil

Method:

  1. In a stand mixer bowl combine flour, yeast, salt, and sugar, mixing well. 
  2. Add sourdough discard and begin mixing on low with the dough hook attachment. Slowly pour in the water and olive oil and mix on low/medium until a rough dough forms.  If you do not have a stand mixer, this dough can be made by hand.
    Depending on your starter's consistency, you may need to add small amounts of additional water or flour.
  3. Continue to knead until the dough is smooth, pulling away from the sides of the bowl, and passes a windowpane test around 5 minutes. If the dough is not coming together, the texture may need to be adjusted: If it appears very sticky, add a small amount of flour. If it is lumpy, add a splash of water and continue to knead.
  4. Transfer dough to a lightly oiled bowl, cover with a damp tea towel, and rise until doubled, about 1 hour. Colder kitchens will require additional time. 
  5. Preheat oven to 450F. Lightly oil a large baking sheet, or two medium pans. 
  6. Place the risen dough onto a lightly floured surface. Shape into a round (or divide in two) and bench rest for 15 minutes covered with a damp tea towel.
  7. Transfer dough to your lightly oiled pan and stretch and press it into shape. Work slowly and gently, as it will want to pull back into the center. Leave a thicker border or fold up the edges to create the crust. 
  8. Top pizza as desired with sauce, herbs, cheese, vegetables, and meats. Drizzle with additional olive oil and sprinkle the crust with herbs.
  9. Bake 25-30 minutes to your favorite level of crisp. Enjoy!
